
Miss Marietta’s Cheese Wafers
It wouldn’t be a party in the South without this tried-and-true dish. Marietta Murray’s wafers are a must at any gathering.
MAKES ABOUT 15 DOZEN WAFERS
Ingredients
1 stick butter (minus a pat), softened
1 pound extra sharp cheese, grated
1/2 teaspoon salt
1/4 teaspoon red pepper
1 cup flour
Pecan halves
Directions
1. Cream butter and cheese, add spices. Add flour and beat until mixture holds together.
2. Divide dough into thirds; roll into logs. Wrap in wax paper and refrigerate at least 24 hours. (Can keep in refrigerator for 2 weeks.)
3. Preheat oven to 350 degrees. Slice each roll into thin wafers. Place pecan half on each. Bake on parchment paper until crisp and slightly browned. About 15 minutes.
