Shrimp Po’boys with Delta Sauce Recipe
MAKES 6 SANDWICHES

Sandwich Ingredients
3 pounds medium-sized Gulf shrimp
crab oil
Delta Sauce (see below)
lettuce, if desired
tomato, if desired
6 po’boy rolls
Delta Sauce Ingredients
1 cup mayonnaise
2 cloves garlic, minced
juice of 1 lemon
1 small onion, grated
1/2 cup vegetable oil
1/4 cup chili sauce
1/4 cup ketchup
1 teaspoon paprika
1 teaspoon prepared mustard
1 teaspoon Worcestershire sauce
dash of Louisiana Hot Sauce
Directions
1. Peel and devein shrimp. Boil shrimp in crab boil seasoning about 2 minutes, until opaque. Drain and cool.
2. To make sauce, combine all ingredients in a large bowl.
3. In a bowl, toss cooked shrimp with enough Delta Sauce to cover. Be careful not to over-sauce shrimp.
4. Layer lettuce, tomato and shrimp on po’boy buns. Use leftover sauce for dipping sandwich.
