
Tomato, Watermelon and Feta Salad Recipe
SERVES 4
Ingredients
4 cups seedless watermelon, cut into ¾-inch cubes
1 pint cherry tomatoes, halved
1/2 red onion, thinly sliced
2 tablespoons fresh chopped basil
3/4 cup baby arugula
1 tablespoon olive oil
2 tablespoons balsamic vinegar
7 oz. crumbled feta cheese
Salt to taste
Directions
1. In a large bowl, combine watermelon, tomatoes, onion and basil.
2. Gently mix in arugula.
3. In a separate small bowl, whisk together oil and balsamic vinegar.
4. Pour oil mixture over watermelon salad and toss. Add crumbled feta, and season with salt.
5. Serve immediately.
